The signature of Hoogan et Beaufort is wood-fired cooking; I recommend sitting near the open kitchen to watch the staff work around the fire. Chef-owner Marc-André Jetté is a wine lover, and this is reflected in the careful attention given to the wine program.
This impressive wine list of over 700 references is very pleasant to browse with its clean and thoughtful presentation. The classic bottles are all there (Burgundy is particularly well represented) and a few producers are highlighted with a small explanatory text about their vineyard.
