This is one of my favourite lists, not just because of the grand selection of Burgundy wines but also for the fun quotes all over the list. Did you for example know that Karl Marx once aptly warned to “be careful to trust a person who does not like wine”?!
A Burgundy bistro and wine bar by a native Burgundian Geoffrey Daurelle (owner and General Manager) makes total sense as a concept, and I love strong concepts as much as I love diversity. I’m not the biggest fan of commercialised wine collections purchased just because the owners are super wealthy. I believe in a large diversity within concepts. If you’re a French restaurant, diversity in regions of France is appreciated in all styles. If you’re a Burgundian restaurant, diversity in styles and regions within burgundy is appreciated.
A wine list should have soul – and Gaston has the soul of Burgundy. Gaston features traditional French bistro fare with nuances of Burgundian classics.
