When you are looking for an out-of-the-ordinary experience, both food and wine-wise, Zén should be high on your list. The casual and informal treatment by the staff, while at the same time being correct and extremely knowledgable on all aspects of the food, beverages and the pairings, gives this establishment that little extra that you should expect from a three-star Michelin restaurant. The food is very exciting, tasteful and beautiful in a more Asian-inspired way than what might be expected, seeing that the origin of the concept is from Scandinavia. The beverage pairings are, more often than...

This is one of my favourite lists, not just because of the grand selection of Burgundy wines but also for the fun quotes all over the list. Did you for example know that Karl Marx once aptly warned to “be careful to trust a person who does not like wine”?! A Burgundy bistro and wine bar by a native Burgundian Geoffrey Daurelle (owner and General Manager) makes total sense as a concept, and I love strong concepts as much as I love diversity. I’m not the biggest fan of commercialised wine collections purchased just because the owners are super wealthy. I believe in a large diversity within con...

International Sparkling Wine List of the Year, presented by Nyetimber 2025

Convivial is the work of passion by sommelier champion Yeo Xi Yang. It is the first and only Champagne-focused bar in Singapore which put many a naysayer to rest. “Asians do not like sparkling wines and bubbles!” is a statement of the past. It is indeed true that sparkling wines as aperitifs were hard sells back when I was working the floor, but Yang stepped in and ripped all these ideas apart. Champagnes are naturally higher value and do indeed create a bigger hole in the pocket. But if it makes you happy, what's the problem? At Convivial, you will also find well-selected bar grubs in the f...

Jaan is a modern British restaurant serving their interpretation of fish and chips as a snack (not an amuse bouche) and final sweets (not mignardises or petit fours). The restaurant is located on the top floor of Swissotel The Stamford in the City Hall area of Singapore. It has a stunning view of the Singapore River as well as the iconic Marina Bay Sands. The wine list is predominantly French, and the breadth of the regions covered is aptly matched by the diversity of producers in all the regions. The Burgundy selection is the work of a genius, and one thing that often excites me about the Lo...

Claudine is 3-Michelin star chef Julien Royer's second restaurant in Singapore. It is centrally situated in an area called Dempsey Hill, which seems to be an emerging area for top chefs to cluster. The food is classic French, hearty yet elegantly done. The space is grand as it was an old heritage chapel, so when you enter the space, it transports you to a different dimension from what we usually have in our concrete jungle Singapore. If I were on a date at Claudine, I am sure my date would be upset about how much time I will need to read this list. So many gems, yet so little time! The list...

Forma is a passion project by the dynamic trio of the Cicheti group; Liling, Aun, and Ronald. They are now joined by Yum Hwa, pasta maker extraordinaire, to set up Singapore’s hottest table in the ever-growing hipster area of Joo Chiat. You will find this elegant restaurant amongst old shophouses where families live, and old traders are operating shops. But that snaking queue and well-dressed patrons are quite a new sight now on Tembling Road. The Italy-dominated wine list boasts a representation of all of Italy’s 20 wine regions and at least 65 indigenous varieties. To top things up and to...
