There is a difference between being brave and deciding to lead. Marina Bay Sands has never needed bravery, it needs only to decide and the market follows.

This wine list is a statement of intent made from a position of strength, and one of the most exciting things to happen to the Singapore wine scene in years. I’ve had my fair share of wine lists in luxury Chinese restaurants in Singapore, as well as in China, to know what tokenism looks like. Jin Ting Wan, located high on top of Marina Bay Sands, is one of the latest stars in the hotel’s collection of restaurants.

The sommelier team has organised the Chinese selection by region – Ningxia, Hebei, Shandong, Yunnan, Shanxi, Xinjiang – and with producers that are not just well known internationally but some that are hidden gems. This is not a list assembled from a supplier’s catalogue. This is the work of someone who has carefully thought about what China’s wine map actually looks like.

It brings a smile to my face when I find that wines from China are no longer listed as “Rest of the World” at the back of a wine list.
