This is probably the first Asian restaurant I’m recommending. I am pretty sure there are more great lists out there among Singapore’s many Asian restaurants, but Sushi Oono certainly stands out in this category. It’s an Edomae-style fine-dining sushi restaurant where the chef focuses on clean flavours, showcasing the quality of the fish as well as the finesse of the shari, and where the balance of the rice is of utmost superiority.

Sushi Oono first came to my attention for its great Champagne selection but, lo and behold, as I planned my next meal as well as what to drink there, I was overjoyed to find that there is also a small but focused selection of Burgundies (some of which are not within my financial remit but with many that are). The Burgundy producers selected by sommelier Hiromi Ohno, a WSET Diploma holder who also happens to be the chef’s wife, are shrewd and specific, and I think they reflect the chef’s style of cuisine. It brings gratification to be able to order a well-priced wine and not to have to ‘BYOB’ in a Japanese place.
