About Claudine

Claudine is three-Michelin-star chef Julien Royer's second restaurant in Singapore. It is centrally situated in an area called Dempsey Hill, which seems to be an emerging place for top chefs to cluster. The food is classic French, hearty, yet elegantly done. The space is grand as it used to be an old heritage chapel, so when you enter the space, it transports you to a different dimension from what we usually have in our concrete jungle of Singapore.

If I were on a date at Claudine, I am sure my date would be upset at how much time I need to read this list. So many gems, so little time!

The list is Burgundy-focused and has an extensive selection of different producers. Three other factors caught my eye, though: the Champagne list is peppered with the best producers, and this embrace of "what's good is good" is simply fantastic. To have a Loire Valley list that's not just focused on Sauvignon Blanc is much appreciated. Romorantin anyone? Also, finding wines from Auvergne in Singapore is pretty challenging, and the sommelier has done well by managing a list of solid producers from that region.
