Lima is on the cusp of a cocktail revolution that goes beyond making pisco sours, and one of the bars leading the pack is this 2022 opening, Ribeyro, Casa Sutil. Based out of a revamped early 20th-century mansion in Miraflores, signature cocktails are created by mixologist Luis Flores, while the kitchen is overseen by his business partner, renowned Peruvian chef Pedro Migual Schiaffino. While Flores creates a sophisticated cocktail list, playing around with fat washes on Andean agave spirits for example, the passionate wine lover has also compiled a solid 50-strong wine list that focuses on low-intervention and skin-contact vintages, including Chilean País and Etna Bianco.
