About Sapiens

Besides producing its own outstanding charcuterie, such as alpaca salami, mortadella and duck prosciutto, this San Isidro-based restaurant also has a strong ability with rice dishes. The sibling casual dining establishment to award-winning Mayta, Sapiens’ chef-patron Jaime Pesaque takes its inspiration from fiery culinary techniques, including flame-grilling avocado, roasting cauliflower, grilling salad leaves and braising chirimoya fruit as well as serving up Americana Angus short ribs. It also takes sustainability seriously, using discarded corn cobs as instant fire igniters. The wine list is global, with a focus on South American vintages from Chile and Argentina. There’s also a decent by-the-glass selection to back up the 65-label main list, which has a strong penchant for reds.
