About Mambo

After several years as a sous chef then successfully opening Las Flores, chef Santiago Pérez finally flew solo last in 2025 to open Mambo. Located in a hip converted workshop, his menu is seasonally driven – expect refreshing watercress salad served with wood-fired sole, or flathead grey mullet cured in lemon ash.

In charge of the wine list is the young yet seasoned sommelier and bartender Lucas Rothschild, who brings ‘50 Best’ bar hospitality experience to the table after four years at CoChinChina bar. His 100-strong wine list isn’t ordered by price, by region or variety but by parameters and intensity, such as oxidation and skin contact in orange wines or volume in whites. By-the-glass options change daily.
