About Pabú

Pabú is a Michelin-starred restaurant located at C. Panamá, 4, directly across from the Ministry of Industry and Tourism, in the heart of Chamartín, also noted as a venue preferred by the Spanish royal family. The project is led by Head Chef Coco Montes, who champions a “micro-seasonal cuisine” where vegetables play a starring role. Alongside this culinary proposal, wine is a fundamental pillar, managed by Head Sommelier Patricia García. The list’s philosophy is centered on emotion, authenticity and human connection, understanding wine as "truth, emotion, and territory."

The wine list features more than 400 references and an astonishing selection of nearly 300 options available by the glass.The selection seeks a balance between respecting classic wine regions and supporting small producers with vibrant, honest, and low-intervention wines, specifically championing local Spanish wines from historical vineyards (previous listings have included La Palma, Ribeiro, Bierzo, Montsant, Arribes del Duero, etc.). Noteworthy is their remarkable devotion to Champagne, featuring a very interesting selection of Récoltant-Manipulant producers (grower Champagnes).

The list is deliberately inclusive, encompassing alternative expressions (natural wines, orange wines) and categories often overlooked in fine dining, such as vermouths, artisanal meads, premium sakes, and sophisticated alcohol-free options.

As a Michelin-starred restaurant, the pairing option is highly important. Their goal is to “prolong emotions” and make every client feel welcomed. The “new harmonies” (pairings) are adapted to the individual, selecting the “intensity of daring” in the wine according to the diner. This commitment to providing discreet and seamless service extends to table-level personalisation, allowing for different pairing journeys within the same dinner, ensuring every detail is tailored to the client’s individual interests.

As a note of curiosity, Patricia, apart from her already busy position as Head Sommelier at Pabú, also produces a fine and elegant Garnacha wine in the Sierra de Gredos area.
