Address: Carrer de Sèneca, 25, Barcelona

Best Newcomer List Spain, presented by Dreissigacker 2026

Pompa is Carles Pérez de Rozas’ latest move in Barcelona – a smaller, more wine-driven space that feels personal, deliberate and slightly rebellious. Set in one of the city’s most central neighbourhoods, Pompa is the project of a chef who has travelled far before returning home. Pérez de Rozas trained at Hofmann in Barcelona and then worked in some of the world’s most demanding kitchens: with Seiji Yamamoto in Tokyo, at Central in Lima alongside Virgilio Martínez, and at Michel Bras in Laguiole. That background doesn’t show off, it shows control – precision without stiffness. Here, wine clea...

El Molino de Urdániz is located 20 kilometers north of Pamplona, near the small town of Urdániz, and it is on the road where one of the routes of The Way of St. James passes. The restaurant, that looks like a hamlet house, has been opened for more almost 28 years but is in constant evolution. El Molino de Urdániz happens to be 2 restaurants in one. The ground floor (which is called Origen) is a bistro type of restaurant with a closed menu composed with several starters, main courses and desserts. The wine offer is short, with affordable local options. The first floor is where the 2 Michelin...

Ambivium restaurant is located in Peñafiel village, in the heart of Ribera del Duero DO in Castilla y León region. The restaurant has one Michelin star and is based within the Pago de Carraovejas winery. Its CEO, Pedro Ruiz, says that he launched Ambivium in 2017 with the goal of being the “first class gastronomic venture at the winery” and, in some way, he's achieved it. 9. VII, a wine bar in Girona, Spain.

    Phone: +34 972 21 56 04

Address: Plaça del Vi, 7, 17004 Girona, Spain

    Special Jury Prize Spain 2026

VII opened in Girona’s old town, on the charming Plaça del Vi – a location whose name (“Wine Square”) already sets the tone. The space was previously run by one of Spain’s most respected sommeliers, Roger Viusà, who has since become a vigneron and a key figure in promoting low-intervention wines in Empordà. Viusà had long been connected to the orbit of El Celler de Can Roca, and the transition of VII into the hands of the Roca family felt like a natural evolution rather than a rupture. Today, VII is a classic bar à vins with a beautiful terrace and a serious sommelier team led by Audrey Do...

This place is just on Plaza de la Independencia, also popularly known as La Puerta de Alcala, with a fantastic outside terrace where customers can enjoy a lovely glass of Champagne (in fact, no coffee is allowed on the terrace) overlooking this amazing monument. The interior is modern, elegant and well-spaced, with thick wooden tables.
