El Molino de Urdániz is located 20 kilometers north of Pamplona, near the small town of Urdániz, and it is on the road where one of the routes of The Way of St. James passes. The restaurant, that looks like a hamlet house, has been opened for more almost 28 years but is in constant evolution.
El Molino de Urdániz happens to be 2 restaurants in one. The ground floor (which is called Origen) is a bistro type of restaurant with a closed menu composed with several starters, main courses and desserts. The wine offer is short, with affordable local options.
The first floor is where the 2 Michelin Star Restaurant, ̈El Molino de Urdániz ̈ is located. Theyserve a tasting menu focused on sustainability and local producers. So is the wine list. It has more than 400 references, mostly of Spanish sustainable producers, but with an interesting selection of foreign wines. Jaione, one of the owners, is the maitre and sommelier in charge of the caller.
The restaurant offers wines by the glass, which are not fixed, since they open bottles following the guest ́s preference and menu offered. The star is the paring, with wines and other beverages like sakes, kombuchas, vermouths, beers, ciders, etc, combining harmoniously every single step of the menu.
