On this occasion, I would like to take you outside of Madrid, just about two hours away by car, but believe me, it will be a very worthwhile journey.

Ambivium restaurant is located in Peñafiel village, in the heart of Ribera del Duero DO in Castilla y León region. The restaurant has one Michelin star and is based within the Pago de Carraovejas winery. Its CEO, Pedro Ruiz, says that he launched Ambivium in 2017 with the goal of being the “first class gastronomic venture at the winery” and, in some way, he's achieved it.

From the main door, the views lead out onto Peñafiel Castle, surrounded by Tempranillo vineyards. The restaurant philosophy is focused on tasting menus in tribute to their ancestors' legacy – traditional yet elaborate Castilian gastronomy is blended with the latest techniques, developed from their innovation lab.

It's a kind of journey through these beautiful restaurant facilities, as you will have different dishes in different stops: the wine cellar, pairing laboratory and main kitchen, finishing at a huge and comfy round table in the main restaurant.

Fernando Moret Mayo is the wine director, managing and organising 4,700 different bins. His team puts a lot of energy and emphasis on the wine pairing. So you could choose for yourself, according to your expertise but, to get the whole experience, I would suggest listening to every single word that this sommelier team has to say and be guided by their wine pairings.
