About Labombe by Trivet
The second venue by the successful duo who launched Trivet. Named after chef Jonny Lake’s imaginary restaurant from his school project aged 13. His teacher asked, “Où sont les boissons?”. This critique has now been answered after finding his partner in wine, Master Sommelier Isa Bal, while both working at the Fat Duck.
Isa’s mischievous personality defines the construct of the euro-centric wine list’s presentation. The B-list at the back of the wine book includes wine regions like Bordeaux, Burgundy, Barolo, Brunello and Barbaresco – all the B’s – which just happen to be some of the worlds best to offer and the list has them there. The A-list is everything else – mostly European wines to celebrate its multitude of cultures, including less commonly featured wines such as those from Georgia and Isa’s homeland Turkey, as well as a small selection from outside of Europe. By dividing the wines into A-list and B-list, there is a reference to their predecessor on the site, the super-exclusive Met Bar, where you couldn’t get in unless you were a celebrity A-lister. With the A-list of fewer icon wines sitting in front of the B-list, this place is refreshingly sending the message that Labombe is open to and will welcome everyone.
Open from noon until late daily, it is a perfect place to drop into at any time, and answer Jonny’s teacher’s question. Drinks, including smart cocktails, have well and truly been found. Will you be tempted by something to fulfil your wine curiosity? Perhaps you might just prefer a glass poured from a 5-litre large format. Spectacular either way.
