About Les Chants d’Avril
A true UFO on the local wine scene, Les Chants d’Avril is the brainchild of sommelier Véronique François and chef Christophe François. The wife-and-husband duo took over this address in the Champs de Mars district in around 2010.
The rules here are a little different – guests are invited to order from the “mystery menu”, letting the team decide what they’ll eat and drink. The cuisine is market-driven, deeply seasonal and local. In your glass, wines are poured blind (though 90% of the time it will be something delicious and special from the Loire Valley).
Véronique is one of the city’s most respected sommeliers, known for nurturing long-term relationships with winemakers. They don’t hesitate to save and age bottles for several years before service and only open them when perfectly ready. Their wine collection is unrivalled in Nantes, as is their commitment to mentoring the next generation of sommeliers. Les Chants is one of those too rare places where genuine, intuitive hospitality meets a quiet kind of excellence. Time – and the outside world – seem to stop at its doors, for the duration of a meal.
