You’ll hardly meet anyone who speaks as passionately about Muscadet as Balthazar’s owner, Jimi Dufief. His modern, meat-focused bistro boasts what is quite possibly the largest selection of Muscadet and Gros Plant wines of any restaurant. Every style is represented, with well over 100 references from producers across nearly all crus and villages.

The list doesn’t stop here – other regions are generously featured, with a clear bias toward organic and biodynamic producers. The overall impression is that of a cellar assembled with a genuine passion and heart. Older vintages add an extra layer of depth, while prices remain refreshingly reasonable throughout.
