About Restaurant Saisons

Saisons is the gastronomic training restaurant of Institut Lyfe hospitality school, and the only one in France to hold a Michelin star, awarded in 2020. No coincidence, just an effervescence of talent.

There is something rare about this place: a soul that has been passed down since its opening in 1990 by Gérard Pélisson and Paul Bocuse. You are carried at once by the history of the venue and by the unmatched warmth of the training teams, who give everything with a sincerity that cannot be faked. Under the direction of chef Florian Pansin, the cuisine reaches a precision worthy of haute gastronomy without ever losing the pleasure and indulgence that make it truly memorable.

The service, led by Sébastien Candusso, embraces the same energy: rigorous and alive, driven by passionate individuals who have chosen to be here.

The sommellerie, orchestrated by Gaëtan Bouvier (International ASI Gold Diploma, Meilleur Ouvrier de France Sommellerie, Master of Port, and Meilleur Sommelier de France) alongside Anaïs Pierre, stands as a signature in its own right. Gaëtan dedicates one day a week to visiting winemakers, walking the vineyards, and nurturing that living connection with the estates he champions. The wine list is a direct reflection of this: around 500 references in constant motion, shaped by a close follow-up of producers and vintages from the greatest terroirs to the most outsider appellations; a list that breathes, underpinned by food and wine pairings of remarkable precision.

Not to be missed is the fortified wine bar, where you can rediscover the exceptional depth of these wines alongside equally extraordinary cheeses, aged by Christian Janier, MOF (Meilleur Ouvrier de France Sommellerie Fromager).
