Bar Magnolia doesn’t open every night, which means its only three days a week (Thursday to Saturday) are busy, joyful, with the room full of people who have been waiting to come in. This small, serious wine bar sits quietly just off the start of Sydney Road, like it’s been there longer than it has. Inside, it’s soft light on brick, bentwood chairs, stained glass catching just enough of the day, and a room that invites conversation. Things here are done properly, but never too fussily.
The wine list is tightly curated, sharp in its focus. There’s structure and acid, a bit of funk when called for, and a strong through-line of wines that speak of where they come from and who made them. The classics get their time, but there’s also room for producers whose work deserves the spotlight, whether or not you’ve heard of them.
Food leans French, not in a theatrical, themed way, but in the confidence of dishes cooked with purpose. Think of savoury tartes tatin, perfectly executed oven-baked poisson du jour with sauce Vadouvan and pipis, entrées that combine the classic bistro fare with some very clever twists, or a dessert that hasn’t been deconstructed to death. The cooking is grounded, elegant, and full of intent.
Food as well as service are refreshingly wholesome, with no over-the-top jargons or frills. Everything is made well and full of personality. Service walks the line well: it’s precise without being stiff, tuned-in without hovering. You’ll get attention when you need it, and space when you don’t. You might think staff members are busy when they are bustling around but, just when you think you want a new wine or a new dish, they magically appear at the table. And that only comes from owner-operators that have been in the game for a long time: the dynamic duo here is chef Mia Coady-Plumb (ex Cutler & Co) and Lawrence Scanlan (winemaker at Dirty Black Denim Wines).
Magnolia is a one-hatted venue built by people who care about the right things: how nicely is the table set, how a wine lands in a glass, and how to create a room that feels calm, composed, and compelling. This is the place you want to go if you want to avoid big ego-driven CBD venues.
Go with someone who enjoys quiet detail. Or go alone and order the wine that’s been open just long enough to be perfect.
