About La Table d'Olivier Nasti
La Table d'Olivier Nasti is a two-Michelin-starred restaurant in Kaysersberg’s Le Chambard hotel. Run by chef and owner Olivier Nasti for over 20 years, its high-level cuisine is deeply rooted in the region, displaying the technical mastery of a Meilleur Ouvrier de France (MOF).
Wild game, both feathered and furred, is put centre stage, with an additional focus on local vegetables and freshwater fish (the smoked Rhine eel, in particular, has long earned acclaim).
Sommelier Jean-Baptiste Klein, also a Meilleur Ouvrier de France, uses the wine list to share his vision. On the one hand, he is dedicated to the vineyards of Alsace (featuring many Rieslings, Pinot Noirs and vertical tastings from the finest estates) whilst, on the other, he is keen to give a voice to the area’s burgeoning natural wine scene and to highlight orange wines. The international selection emphasises Burgundy, the Jura, Loire Chenin Blancs, and Champagne, plus other regions outside of France stretching as far as Slovenia and Japan. Wine and food pairings are given special attention.
