Burdock & Co

Burdock & Co became an early staple in Vancouver’s farm-to-table dining culture, with chef-owner Andrea Carlson’s dedication to local ingredients circling thematically and seasonally over concepts native to the Pacific Northwest (everything – down to the citrus – is sourced from nearby). So, depending on the season of your visit, expect to find flower- or resin-themed tasting menus. Wine pairings are offered at classic and premium tiers, with a small list deeming itself 'post-natural,' focusing more on regenerative farming aspects and less on the wacky side of the flavour spectrum.

Located in the bustling Main Street neighbourhood, Burdock & Co is close to plenty of shops, bars and activities, though time moves differently in this sonorous and moodily-lit dining room. Dining, like much of Vancouver’s Michelin enclave, is tasting menu-focused, though walk-ins are accepted to sidle up to the bar if space allows. The open kitchen bar will likely tempt you into staying for more than a dish or two.

The floor staff boasts a multitude of trained sommeliers and former wine directors from around the city meaning that, no matter when you arrive, you’ll be in capable and wine-knowledgeable hands.
