New Zealand ambassador Maciej Zimny announces nine new Red Stars: "wine is truly gaining momentum"

Our New Zealand ambassador is adding nine new Red Stars. Here, Maciej Zimny tells us why he’s so excited about the country’s wine scene.

“The wine and restaurant scene in New Zealand is currently experiencing a remarkable evolution,” says Maciej Zimny. “More and more establishments are recognising the critical importance of a well-curated wine program, understanding that it’s not just an add-on, but an essential part of the dining experience. We’re also seeing a significant rise in specialised wine bars.”

That would explain why Maciej is adding nine new venues to Star Wine List, each reflecting New Zealand’s broad wine offering and the country’s agile approach to hospitality.

Maciej himself is no stranger to understanding guests’ needs, as a certified sommelier with the Court of Master Sommeliers and former winner of New Zealand Sommelier of the Year (2015). He is perhaps best known for co-founding the hugely successful Noble Rot Wine Bar and Noble Wines Fine Wine Suppliers in Wellington. Originally from Poland, Maciej brings over two decades of wine experience to Star Wine List.

What can you tell us about your new selections?

"Thank you for the opportunity to share insights about my latest selections for the New Zealand guide. It’s a pleasure to showcase the dynamic and evolving wine culture across Aotearoa and the venues I have selected this year not only highlight exceptional wines but also offer unique experiences.

"Starting in Queenstown, Toast & Oak wine bar is a must-visit, thanks to the expert guidance of sommelier and co-owner Giulio Barducci. Meanwhile, Rātā restaurant continues to be a champion of Central Otago wines, offering a broad selection that showcases the region's renowned terroir.

"In Auckland, San Ray and Bon Pinard each bring something special to the table. Bon Pinard, in particular: their wine list harmoniously blends classic selections with modern, cutting edge wines, reflecting a deep respect for the craft while embracing new trends.

"Wellington’s Plonk captures the vibrant energy of the city’s CBD, with weekly jazz performances and DJ sessions adding to its lively atmosphere - it’s a place where wine, music, and community come together seamlessly. Equally noteworthy is 11 Woodward, a haven for those who appreciate the subtleties of Beaujolais wines with a curated experience that’s both rare and refined.

"In Christchurch, Gatherings restaurant is a celebration of natural wines, prioritising sustainability and authenticity, offering guests a chance to explore wines that are true to their origins. Cellar Door further enriches the region’s wine scene with its impressive offering of over 20 curated wine flights, available daily.

"Finally, in Blenheim, Fidelio Café & Wine Bar adds a playful twist to the wine-tasting experience with their blind tasting challenges.

"Each of these establishments brings something special to the table, whether it’s a focus on local terroir, a commitment to natural wines, or an innovative approach to customer engagement.

"In a country that is increasingly recognised as a premium tourist destination, the depth and diversity of a venue’s wine list are becoming essential factors for discerning diners. I’m confident these venues will provide both locals and visitors with memorable wine experiences across New Zealand."

How would you describe the wine and restaurant ethos in New Zealand right now?

"New Zealanders are increasingly open to wine education and discovery. From my own experience, I've noticed a fascinating trend: during the winter months, there’s a marked interest in international wines, with locals eager to explore and learn about new regions and styles. Conversely, in the summer season, when tourists flood in, the focus naturally shifts back to showcasing the best of New Zealand wines.

"Each year, the standard of wine programs across the country continues to rise. In my humble opinion, if an establishment doesn’t properly invest in its wine program, it’s at a significant disadvantage. Wine is truly gaining momentum in New Zealand, and those who fail to recognise this are missing out on an essential component of success in the hospitality industry.

"Interestingly, some of the most successful restaurants and bars around the country are often run by owner-operators who exude passion for their craft. Their hands-on approach and deep personal investment in their establishments translate into exceptional experiences for their customers, particularly when it comes to their wine offerings.

"In conclusion, the New Zealand wine and restaurant scene is not only vibrant and dynamic but also on an exciting trajectory of growth and refinement."

At your own place, Noble Rot in Wellington, what are guests asking for and enjoying this winter?

"This winter at Noble Rot, our guests are particularly gravitating towards international wines, with a strong preference for those from Europe. The cold weather seems to inspire a longing for classic regions, and we’ve noticed a significant increase in interest in wines from around the world — places our guests would rather be.

"Guests also tend to favour richer, fuller-bodied wines during the colder months — wines that provide a bit of comfort and warmth, almost like a hug from the inside.

"Our degustation menus have been incredibly popular, offering more than just a dining experience: our sommeliers guide guests through a journey of stories about the wines, the regions they come from, and the producers behind them. It’s a chance for our guests to escape.

"Winter is the perfect time for us to roll out our wine events program, with special events each month. Recent highlights include the "Amber Revolution," celebrating orange wines, the "Valli 25th Anniversary Winemakers Dinner," and the "Sicilian Soirée," starring Donnafugata wines.

"And August is particularly exciting for us as we take part in Wellington on a Plate, the largest culinary festival in the Southern Hemisphere — a month filled with events that keep our community in high spirits, no matter the weather outside."
