In the 8th arrondissement, Aveyronnais chef Julien Boscus offers at Origines a menu that reflects his own character, backed by a cellar of 800 references whose quality has been recognised with Wine Spectator’s Best Award of Excellence and a Trophée du Tour des Cartes from Terre de Vins. The setting is distinctly “starred” (it holds one Michelin star) but no less warm and intimate – midnight-blue walls, tawny velvet armchairs, pale wood tables – conceived for a business clientele delighted to find such an address a stone’s throw from the Champs-Élysées at lunchtime, with a more relaxed atmosphere in the evening.

Sommelier Adrien Butko oversees a selection largely sourced directly from vignerons, covering all French wine regions, with a particularly sharp sense of food-and-wine pairing: grower and great-house Champagnes, classic and lesser-known Burgundy, Rhône Valley, Provence, Corsica, and of course fine references from the South-West vineyards, in tribute to the chef’s roots. The cuisine, built on solid classical foundations, showcases seasonal produce worked in its entirety – carcasses included – with meticulous plating and seasoning that never fails to make an impression.
