About Hållfjället
Regardless of whether you make your way to Hållfjället on foot, on skis, or by snowmobile, the eight-kilometre journey up the mountain contributes greatly to the experience that awaits. Upon arrival, a fire crackles in the carefully renovated old mountain station, which is set in a breathtakingly beautiful location on a plateau overlooking lakes, forest, and mountain peaks. Hållfjället is Sweden’s new gastronomic must-visit, run by restaurateur couple the Perezes – chef Rod and sommelier Linda, both with backgrounds at Sweden's finest restaurants. Linda has made a comeback to the restaurant world after spending the past decade working as a wine writer. Her deep knowledge of drinks and clear sustainability values are reflected in the wine list, which – with few exceptions – is dominated by European wines. It is clear that her heart beats especially for France, and not least the mountain-adjacent regions and grower Champagnes. Despite the list being entirely new, it has both depth and breadth, featuring producers that only the most wine-ambitious restaurants can get their hands on.
The experience at Hållfjället rests on four equally important pillars – hospitality, environment, drink, and food – which together create a seamless experience. From the moment you arrive to the moment you leave the following day, all you have to do is go with the flow. Once the backpack is off and boots or hiking shoes have been swapped for slippers, you are welcomed to the kitchen island – the heart of Hållfjället. Here, snacks from the wood-fired oven are served alongside a first, and oh-so-longed-for (and well-deserved) glass of Champagne. The sauna (and what a sauna!) is best followed by a round of cards and a well-shaken cocktail in the loft before dinner. The meal consists largely of the restaurant’s home-grown Jämtland vegetables, served in the beautiful dining room with its original ceiling paintings still intact. Here you can choose a drinks pairing or follow the sommelier down to the wine cellar to browse and select a bottle yourself. In all likelihood, the evening ends up on the roof with the spectacle of the Northern Lights, a digestif, and freshly baked cookies.
