About FZN by Björn Frantzén

Once you’ve found its entrance, FZN takes you on a journey through the different parts of the restaurant, such as the station where they prepare the scallops. A very high level of hospitality and a warm atmosphere make you feel totally comfortable. The experience and cuisine are both related to the original Frantzén in Stockholm – a French style that is, at the same time, Scandinavian, with a few Asian touches.

FZN has raised the level in Dubai in terms of wine, for multiple reasons: the head sommelier is very knowledgeable and, what’s more, it has the resources of the Atlantis, The Palm hotel to play with, meaning that the restaurant can store a lot of wine – and has the finances to buy it. They have special imports and a lot of back vintages for Champagne, plus other wines, which is quite unique for Dubai; every wine region is well covered.

You can choose from the à la carte wine list but I think the wine pairing is done very well here. And not to forget, the Champagne trolley at the start has an exceptional selection by the glass.

  • This is a wine list in upper case, with exquisite details such as the use of the chef de cave's name and the disgorgement date alongside their sparkling wines. A list of great magnificence, featuring the most prestigious names as well as lesser-known producers of exceptional quality. Its vertical selections of wines from Burgundy, Bordeaux, Rhône, Germany, and Piedmont are impressive. Likewise, few lists in the world gather such a vast array of cult Californian wines. A list crafted to navigate both the excellence of wine and all wine-producing regions on the planet. Impressive. [Star Wine List of the Year UAE 2024/'25].

  • The winner of the Best Newcomer List displays a confident wine program with direction and expertise behind it. It is focused on quality producers with a contemporary outlook, and I find it particularly impressive for a new place to have such a big part of the list dedicated to vintages dating more than five years back. • This wine list demonstrates the hallmarks of a truly world-class list: clarity in structure, depth across key regions, and a precise balance between benchmark producers, mature vintages, and contemporary talent. The Burgundy and Bordeaux sections are exceptionally detailed, Champagne and the Northern Rhône are rigorously represented, and the international elements add range without diluting focus. The list integrates icons, rarities, and thoughtful value selections, and its scale is matched by a professional technical precision reflective of a programme built with both ambition and expertise.
