About Es Fumeral
Situated right on the seafront at Cala Nova beach, Es Fumeral is a restaurant that celebrates the essence of the Mediterranean from a contemporary yet authentic perspective. The venue, surrounded by nature and opening out onto the sea, invites guests to enjoy a relaxed atmosphere, with attention to detail and a strong connection to the surroundings.
The cuisine, led by chef Alberto Pacheco, centres on fresh, local and seasonal produce, with simple dishes and traditional techniques that respect the original flavour of each ingredient. Their offering aims to delight through simplicity, quality, and a genuine connection with the island’s landscape.
Daniel Paier is the project’s wine director. His approach focuses on creating wine lists with a clear identity, combining classic regions with contemporary producers, always with an emphasis on balance, precision and gastronomic coherence. The selection reflects a personal vision shaped both by haute cuisine and a strong connection to Mediterranean produce, resulting in a list designed to enhance the dining experience, rather than merely accompany it.
The wine list is constructed from a classic European perspective, with producer-driven Burgundy and Champagne at its core, reflecting a clear focus on terroir, balance and precision. Spain plays a significant role, not only through established regions such as Rioja, Ribeira Sacra and Rías Baixas, but also through a carefully curated selection of producers who are redefining the country’s identity.
An extensive by-the-glass wine programme, supported by the use of Coravin, allows guests to sample some of the most unique wines on offer here.
