At Amphibian, six floors above the city, things literally rise to the occasion. Set on the rooftop of Onassis Stegi, one of Athens’ most important cultural institutions, the restaurant plays, like its name, between two worlds – comfort and fine dining – without ever choosing sides.
The kitchen, led by Tasos Mantis, carries the DNA of Soil, his acclaimed restaurant in Pangrati, into a more relaxed, accessible format. You taste it in the details, like foraged elements, layered sauces, bold textures. And then, ramen, schnitzel or fried shrimp enter the table.
The wine list, curated by sommelier Kosmas Giannoulis, features around 200 labels from both the Old and New Worlds, with a particularly strong Greek presence. Much like the menu, it moves in a natural progression, from fresher, more vibrant expressions to fuller, oak-aged, more structured wines, mirroring the shift in flavours across the meal. Alongside it, a carefully selected range of beers and sake adds another layer, offering pairings that complement the food in a more unexpected, but equally thoughtful way. There’s also a selection drawn from Soil’s cellar, including older vintages of notable Greek wines. Cocktails are similarly considered, flavourful and expressive.
