Thierry Schwartz and Cyril Kocher are an inseparable duo, passionate about naturalness in both food and wine. The wine cellar is filled with natural gems. Here, winemakers were friends of the house long before they gained fame and so Jurassians like Overnoy, Kagami, and Ganevat share the table with Alsace’s own natural wine world. You’ll find a sea of bottles from the Courtois family and a veritable library of the vineyards of Auvergne. Throughout, you’ll find unexpected vintages at all price points.

Also noteworthy is the monumental Chartreuse cellar – these two have great taste!
