At the top end of town is Le Royal, located in the region’s newest five-star hotel, The Royal Champagne Hotel and Spa, in Champillon. It is a destination in itself by virtue of its sweeping views of the Marne Valley and refined hospitality.
Le Royal is the hotel’s gastronomic restaurant bearing one Michelin star and takes its role as an ambassador for Champagne seriously. To this end, they showcase all the different regions of Champagne and have procured relationships with specific producers to offer exclusive experiences. For example, there is a significant investment in a cellaring program so that guests can enjoy mature bottles at different stages of maturation. There’s also a ‘dosage experience’ for guests to taste and better understand the wines and their aging potential.
Burgundy, Rhône and Loire Valley wines also feature strongly and form part of the cellaring program to achieve greater maturation. And with their eye to the future, the sommelier team is increasing the representation of Beaujolais, which they say is a rising star, also Riesling from Germany as well as Sherry.
On a dining level, great care is taken to pair Champagnes with a meticulously constructed tasting menu or à la carte dishes, which you can enjoy against a lavish backdrop of paintings featuring Napoleon’s favourite women.
If you’re looking for something less formal, the hotel’s bistro-style Le Bellevue restaurant still carries the full wine list, aided by the advice of the sommelier team, but the ‘by the glass’ agenda is slightly different.
