Single Thread sits at the pinnacle of Californian fine dining as one of the most recently crowned Michelin three stars. Helmed by Chef Kyle Connaughton, and his partner-farmer-wife Katina, Single Thread celebrates the bounty of northern California’s agriculture and fisheries, infused with subtle Japanese-informed techniques and flavours. Single Thread has a 24-acre farm property that supplies the bulk of their vegetables, keeping the menu seasonal and focused on the best of what the field has to offer. The Connaughtons infuse every part of their service with the Japanese concept Omotenashi, a philosophy of whole-hearted, other-focused hospitality. If you’re really looking to splash out, there are five well-appointed rooms above the restaurant.
The absolute unit of a wine list covers nearly the entire cannon of fine wine, and while you’ll certainly be paying for the blue chip bottles that collectors seek out, there are plenty of reasonably priced options and hidden gems in categories like grower Champagne, the Loire Valley, Germany and Austria. This is also probably one of the best places to drink the very best wines of the “new California,” a loose collection of producers that mostly started working in the late naughts to early teens, focusing on freshness, elegance, and refinement, rather than the power that so regularly defines the state’s wines.
