Part of a family-owned hotel, the entire operation is run with quiet precision by a husband-and-wife team alongside the chef, and that sense of cohesion carries through to the glass. The list reads like a study in Austrian wine, stretching deep across regions, styles, and vintages, with around 600 labels in total.
Internationally, it stays grounded, with classics from Italy, Germany, and France, plus a measured touch of natural wines, mostly Austrian, with a few thoughtful outliers. There’s real flexibility: a strong by-the-glass programme, Coravin pours, and a considered range of non-alcoholic options. It begins with small rituals: an apero cart, crisp Schüttelbrot with fennel seeds, and then builds into something quietly serious.
