One of Chicago’s newer and more exciting additions is the fine-dining tasting-menu-only Indian concept from Chef Sujan Sarkar. Clean, charmingly mid-century decor provides a delicate canvas for really excellent meals that provide a unique expression of both traditional and modern Indian cuisine.

The wine program is an absolute delight, led by their glittering wine director, who’s designed one of the more unique menus in the city, themed not on region or raw material, but on artistic movements. Explore “Pop Art” for fun sparkling and chillable reds, or “Impressionism” for something subtler and more classical. It definitely holds the award for “most fun to read” list in the city - and it’s packed with substance, not just style.

It must also be said that the by-the-glass list is curated with rare precision considering the complexity that composes an all-Indian menu. I have particular respect for a skilled wine list that isn’t packed with things a diner “thinks they want”, but rather curated with glasses that will truly support the dining - with no capitulation.

It reminds me of the Altman classic Gosford Park, regarding perfect service: “I know when they'll be hungry, and the food is ready. I know when they'll be tired, and the bed is turned down. I know it before they know it themselves.”

I didn’t know how much I wanted Madeira with my curry course, but damned if I’m not glad I was provided it.
