A stone’s throw from Place Saint-Michel, a cave à manger with speakeasy allure, run by the irrepressible “Augustin,” distinguished writer and self-proclaimed Italophile, who tends his cellar and counter the way one once held court: with passion, gluttony, and a keen sense of conversation.
Beyond the French and transalpine marvels lined up on the shelves is a cellar without a set list, teeming with razor-sharp references, often in limited editions (justifying a similarly limited number of seats), accompanying small and larger plates that never skimp on the nobility of the product – among them, an exquisite camouflage burrata, poultry encased in terracotta giving rise to a genuine ceremonial unveiling at the table, and a freely avowed passion for truffle, black or white depending on the season.
Having spent several years of his life in Italy, the owner now holds almost unrivalled allocations, which he cultivates preciously alongside his passion for grower Champagne and the Jura. A truly one-of-a-kind address, as unclassifiable as it is erudite.
