A Brand New Burgundy 6 / 7: Domaine Cassiopee

High-priced, exclusive, heavy with tradition. Burgundy’s certainly got a reputation, and it’s not for nothing either. But the last 15 years have ushered in some exciting new developments, and a different set of associations now comes to mind. Burgundy? Why, that’s courageous, authentic, young, accessible! All that is thanks to the winemakers of a new generation who have dared to take the leap into this established region, sometimes from far away. Their approach fuses a deep-rooted appreciation of Burgundy‘s unique terroir and flavours with modern, ecological approaches to viticulture. This is your opportunity to get to know the protagonists of this new Burgundy up close and personal – in our 6-part wine dinner series.

Anyone with an interest in Burgundy wines will, sooner or later, end up in Beaune. It’s a real hot spot, and so it’s easy to forget that just a few kilometres away there is a very different Burgundy: quiet, rural, almost a little removed from the world. One such place is Sampigny-lès-Maranges, at the southernmost tip of the Côte de Beaune. It was here that Talloulah and Hugo Mathurin founded Domaine de Cassiopée in the spring of 2020. Before that, Hugo worked with Jean-Marc Roulot and Frédéric Mugnier, while Talloulah trained at Clos de Tart and with Marie-Thérèse Chappaz, an education that shows both in the precision and restraint of their wines.

On around five hectares of vineyards, spread across eight parcels, the two produce wines that have nothing to do with polished Burgundian routine. The cool, windy climate of the Maranges, its wooded hills and numerous springs mean that harvest here usually takes place ten to fifteen days later than in places like Meursault. For a long time, this was seen as a disadvantage. Talloulah and Hugo see the opposite: this is precisely where the potential lies — to translate a very particular place into an equally particular wine.

From the outset, the vineyards have been farmed organically, largely following biodynamic principles. The vines are up to 110 years old, the grapes are harvested by hand, and fermentation happens spontaneously with native yeasts. “The real work,” Hugo says, “happens in the vineyard.” And for that very reason, everything that follows in the cellar is kept to the essentials. Sulphur is used only in minimal amounts; ageing takes place in used barrels and stoneware.

Domaine de Cassiopée stands for precise, elegant wines without make-up: wines that feel “serious” without any need for effects. That some are classified as Hautes-Côtes de Beaune and others as Maranges is simply down to appellation boundaries, not a shift in style. Anyone who wants to understand why Maranges is no longer a hidden gem should not miss this evening.
