The two-Michelin-starred restaurant of prodigious maverick Bruno Verjus, Table has become, over the past decade, one of the most singular addresses in the French gastronomic landscape, entering the hallowed top 10 of the World’s 50 Best in its very first year of eligibility.
The chef – former doctor, entrepreneur, blogger and food critic before becoming a chef past the age of 50 – cooks from his wide open counter, serving menus dictated each day by deliveries from producers and artisans he knows personally. From the moment you arrive, the host sweeps you up in a whirlwind of enthusiasm and bonhomie, moving you very quickly from stranger to regular. Designed to offer a panoramic view over the dining room and kitchens, the bar is without doubt the best spot to settle in.
The wine list, true to form, is a collection of convictions: natural and biodynamic bottles, verticals from great estates and dearly priced cuvées coexist in a register designed to magnify a cuisine of raw product – at once overwhelming, direct and deeply cerebral – including the famous raw lobster that evolves with the seasons, and plating of a sophistication rarely seen elsewhere.
