About Oak

Oak, with one Michelin star, has moved into a beautifully renovated building right in the centre of Ghent. Marcello Ballardin brings a very refined cuisine based on beautiful products. All dishes are full and intense in flavour with now and then interesting influences from Brazil, where Marcello hails from. Valerie Goedertier takes care of the wine, and the wine list has around 250 references. A very interesting selection of champagnes, small producers with a lot of passion from both classic wine regions as well as surprising discoveries from all over the world.

The focus is on wines that are very pure and elegant in style. This is also reflected in the selection of wines accompanying the menu. A full-bodied yet fresh Chenin Blanc, for example, pairs particularly well with baked sweetbreads and tucupi, a sauce extracted from wild manioc root.
