About L'Asphodèle
Located just a few minutes from Lorient, just off the appropriately named Boulevard de l’Atlantique, sits the bunker-like concrete home of L’Asphodèle. This regenerative farming project, led by grower Grégoire Desnoulez and restaurateur Florent Piar (of Les Résistants, Paris), transformed five hectares of farmland and the abandoned buildings of a former campsite. From these ruins, they built a restaurant that works in symbiosis with a farm and its natural environment – serving as the economic pillar of an ambitious, sustainable venture.
While profoundly at one with its surroundings, L’Asphodèle – whose name comes from an endemic plant of the coastal lands of Southern Brittany – acts as the perfect haven from the outside world. It is a cleverly designed concrete shell warmed by a lit fireplace, cosy wooden furniture, soft lighting, an open kitchen and exemplary hospitality. On a wet day, watching the rain pour over the dramatic landscape of heathland as waves march across the horizon offers a fascinating spectacle. This contrasts beautifully with the large, south-facing terrace and its promise of sunny summer lunches.
Described as “simple” by the chefs, the cuisine sits proudly at the intersection of traditional French cooking and a more experimental yet no-nonsense, technical fine dining approach – spanning everything from nose-to-tail butchery to fermentation, with the option to share larger cuts and whole fishes. Diners can expect whole-hearted plates of organic and seasonal ingredients, with vegetables from the restaurant’s plots, cooked with passion and generosity. Service is impeccable, yet personal and approachable, and brief descriptions of the dishes are given in a sincere and natural manner.
The expertly combined wine list covers most styles by the glass, across key French regions, while the full selection of over 450 references showcases the impressive depth of Les Résistants’ cellar and network. Contemporary – with modern classics mixed with rising-star domains – this selection mirrors the kitchen’s commitment to sustainability. It relies on direct relationships with smaller organic producers who share their values and will keep evolving over the next seasons.
In the plate or in the glass, L’Asphodèle’s hits all the marks and more with its unique and authentic proposition – and it’s well-worth the drive it takes to reach it.
