“The super-funky natural stuff disappears slowly” from Düsseldorf’s wine lists, says ambassador Tibor Werzl

Chef and sommelier Tibor Werzl joined the Star Wine List team as Düsseldorf Ambassador in summer 2023, bringing his enthusiasm for all things food and wine to our listings.

“Düsseldorf has always had a strong wine scene,” Tibor tells us. “What’s really new and exciting are the upcoming wine bars around Düsseldorf. Especially in the Rhine-Ruhr area. A lot of good people are taking the risk to become their own boss and get rewarded because of more and more wine-thirsty guests.”

“Phaedra got my attention because Kosta, the owner, is importing some super interesting wine from Rapsani in Greece,” says Tibor. “So I got to know him and his beautiful restaurant, and I was amazed by his wine list.

“The two brothers, Chris and Patrick, of Kantine are close and long-time friends of mine. I met them years ago (unsurprisingly, through wine!) and their restaurant is just a five-minute bike ride away from my home.”

And what is Tibor noticing across the area’s wine lists at the moment?

“For me sparkling wine, especially German Sekt and Champagne, but also quality alternatives are trending on the lists. And maybe there is a little comeback of the classics – the super-funky natural stuff disappears slowly and, fortunately, the good things stay.”
