Sophisticated and serene, in addition to its impressive wine list, Saint Urban also provides one of New York’s most coveted luxuries: a peaceful ambiance.

Saint Urban opened its doors in Manhattan’s Flatiron neighbourhood in 2025. However, chef, sommelier, and owner Jared Ian Stafford-Hill is no new kid on the block. He honed his craft in several of NYC’s top restaurants, including Gramercy Tavern, which is right across the street. Stafford-Hill first opened Saint Urban in 2019, in his hometown of Syracuse, in upstate New York, where it became a local and critical darling.

Saint Urban’s menu changes monthly, highlighting a specific region such as the Loire Valley, Tuscany, or California. The tasting dinner menu can be paired with Stafford-Hill’s suggested wines from the region, or you can take a delightful detour and order from the large globe-trotting list, which includes iconic producers, hidden gems, older vintages, large formats, and plenty of Champagne, all at very competitive price points that encourage exploration.
