Rinteln is not where you expect to find one of the most ambitious wine programmes in Northern Germany – and that’s exactly what makes Fachwerk so interesting.

Since 2016, Julia and Moritz have quietly built something very special here. What started with almost no cellar has grown into a list of more than 1,700 wines – deep, well-curated, and clearly driven by passion rather than ego. It’s not about showing off, it’s about offering real choice and discovery.

The setting is equally unique: a collection of historic buildings, thoughtfully renovated, with over 70 rooms. It feels rooted but never outdated. The restaurant follows the same idea – refined, but relaxed, with a strong sense of place.

Being far from the big cities is not a limitation here. If anything, it gives the project more clarity. Fachwerk has become a kind of destination in itself – a place that proves you don’t need a metropolitan address to build something serious.

With a new cellar and wine retail space planned for 2026, this is clearly a long-term vision. And one worth following.
