About Trattoria al Cacciatore della Subida
La Subida is an institution in the Collio-Brda region. First opened in the 1960s by Joško and Loredana Sirk, it has evolved from a small osteria into a whole estate that celebrates the local traditions of wine and gastronomy. Today it incorporates two restaurants, cabins in the woods, a vinegar cellar and a small winery. Of course, this is all immersed in the gorgeous nature that surrounds it, including vineyards and forests.
The Michelin-starred, fine-dining Trattoria al Cacciatore is a special treat, while Osteria de La Subida is your casual pathway to traditional flavours.
Diving into the seasonal food at Trattoria (with both set menu and à la carte available), one can expect local ingredients from friendly artisanal producers, elevated vegetable plates and always something special from the woods, such as game or mushrooms.
About the Trattoria al Cacciatore della Subida Wine List
In a place like this, a great wine list is a must, but the word ‘great’ barely does this one justice. Reading through the list, you feel how deeply personal this collection is. The Sirk family explores the Eastern part of Friuli and the Slovenian Primorska region like no one else. Around 100 wineries with numerous labels are smartly organised by the distinct climatic zones, giving an insight into the diversity of this two-country region.
While the older generation of the family has contributed a set of local classics with an impressive vintage depth (some bottles date back to 1980!), the son Mitja, a winemaker himself, has added all the important contemporary names. And if you’re lost, just choose your bottle based on the winemaker portraits – funny caricatures drawn on the pages (I bet those are the ones closest to the house and its philosophy).
And the wine list doesn’t end there: Mitja has expanded it with select labels from the most important regions of the world – a pretty bold move for a restaurant in the middle of wine country! But that’s how you know there’s a true vision and passion behind the wine list overall.
