The structure of the list is clear and intuitive, with more than 170 wines in total, neatly arranged by country and mostly accompanied by concise descriptions. This makes choosing easy and confident, even with an extensive selection. The balance between accessible bottles and special cuvées gives the list both depth and elegance. Sommelier Duncan Vos represents a new generation: approachable, sharp, and without pretence (sneakers instead of a tie). His style is relaxed and guest-focused, offering recommendations that feel like a conversation rather than a lecture. A nice guy. If he could, he would happily join you at the table. Pairings are creative and seamlessly aligned with the kitchen, with a focus on local produce, finesse, and worldly techniques. There are also distinctive, high-level non-alcoholic pairing options.
