Why fly for 12 hours to Friuli when a short drive from Denver to Boulder puts you at the doorstep of Frasca, an homage to the cuisine and culture of Friuli-Venezie-Giulia?
This Michelin Star and James Beard Award-winning restaurant is a mecca of fine dining and impeccable hospitality. Though it’s not without a tiny sense of irony: its name is derived from the neighbourhood “frascas” of Friuli – little casual dining spots offering a quick meal and bottle of wine, as likely to be filled with farmers as with families.
However, this Frasca couldn’t be more opposite. It’s old-school fine dining at its most technically precise. The cuisine is brilliantly executed and the wine program might be one of the best in Colorado. Rooted in the wines of the Triveneto and environs such as Slovenia and Austria, there’s also plenty on offer from France, Germany, Spain, South Africa, the USA and even Switzerland.
While Frasca might not be an ‘every day’ restaurant, it is well worth the splurge and should be on everyone’s dining and drinking bucket list!
