It’s not fair… The Wolf’s Tailor, a hidden gem tucked secretly away in a semi-quiet residential neighbourhood, was already very difficult to get into. Then they had to go and get themselves a Michelin Star and now one has to really commit to securing a coveted reservation in their fairly small interior dining room, or, if you’re really lucky (and weather permits), their outside dining area. However, that effort will be well rewarded once you are seated at your table.
Their cuisine and wine program follows an ethos of “in defense of the maker” and applies equally to the agriculturalists of their food and viticulturalists of their wines.
Their culinary and wine offerings are based on highlighting small producers that are thoughtfully committed to reducing negative environmental impact in their soils, vineyards, and cellars. Their global wine list of approximately 150 selections in print at any given time is reinforced by an additional 50 or so options in queue in their reserve cellar. It leans slightly towards Burgundy and Barolo, and they strike a good balance between global icons as well as high-performing domestic producers. They are committed to wines with a sense of place and protection of land.
A great spot to explore skin contact, oxidative wines, sherries, and wines off the beaten path.
