Located inside Resorts World, you should be willing to commit to a full evening at Carversteak. There is plenty to do after dinner, so look at Carversteak as your first course of an amazing night out in Las Vegas.
I might be jumping too far ahead but, whatever happens, for the love of all things culinary, order the Brussels sprouts; include a steak, some fish or chicken, and make sure three or four sides accompany them, and you will love your experience. Rarely is a side dish menu so revered but, trust me, go deep on the sides…
The dining room, while small, is perfectly situated for tableside services. From the cocktail and Cognac carts to the specialised ‘select your own’ steak knife box, you will be entertained by the service all night long.
The beverage program is overseen by some of the finest in the industry. Not one, but two Master Sommeliers are involved in Carversteak: Steve and Lindsey Geddes, both Master Sommeliers, add a huge perspective to the list. While obscure options from the Loire or Rhône are easy to find, they understand that the wine list is driven by the California options. Be optimistic that the sommelier team here is eager to please and has tools, like a huge decanter collection and beautiful glassware, to serve the wine in. Definitely more of a bottle than a by-the-glass list, you can find wonderful selections here.
