Apricity is a low waste, sustainably driven restaurant in the heart of upmarket Mayfair. Their compact wine list of just over 100 wines follows suit, featuring growers who prioritise biodiversity and soil regeneration, naturally reflecting the terroirs with minimum interventions used. ‘Wines of the week’ enhance their regular by the glass offer, and for a list of this size a healthy nod to English fizz, interesting rosé, skin contact and ‘afters’ (including a plum fruit sake brewed in London, under flor treats from Jerez and the Jura and a sparkling Puglian pick-me-up). Despite its conscie...

Restaurant Hjem is situated in the small village of Wall in the heart of Hadrian’s Wall country. Hjem (pronounced "yem") is both a Northumbrian and Scandinavian word for "home", making it an apt name for the restaurant which sees the very best produce of Northumberland come together with Scandinavian values and cooking from the Swedish chef patron. The 24-seat restaurant itself is tucked away within a pub, The Hadrian at Wall, with an open kitchen where diners can watch the culinary action, and a minimalist interior flooded with natural light and clean lines. Moor Hall is a luxurious grade II listed restaurant with rooms, with a history dating back to the 13th century. Since being transformed in 2015 by the present owners they’ve received rave reviews and a coveted two Michelin stars. As well as the main restaurant they have private dining and a ‘kitchen experience’. The uber talented chef is ex-L’Enclume (another two star) and El Celler de Can Roca. The cuisine is new British - delicate and produce driven, presented in exceptional and natural surroundings. It’s all tasting menus, either four or eight courses at lunch, eight only for dinner and win...

Spry is a wine bar and shop with a basement cafe, located on the east side of town and a short walk from hip Leith. The spacious, modern room has the wine selection displayed on shelves for you to easily peruse, with natural wines being the main focus. Quality, however, is always to the fore, and Spry offers a classy selection from small independent producers made with care for both people and planet. Matt Jackson, who owns Spry with his wife Marzena, does his utmost to only buy from good people, “something that has become somewhat of an unexpected factor while building the wine list,” he s...

Trivet is in a beautiful, calm and minimalist space in Bermondsey, just over the river from the City of London. A joint venture between Isa Bal MS and chef Jonny Lake who met working at the Fat Duck, it’s creative and diverse fine dining with influences from all over. There is a bar space for drinking and snacking and a light-drenched, welcoming dining room. It’s a haven of cool, calm and quality in one of the capital’s most historic and urban neighbourhoods.

Housed on the first floor of a former coffee warehouse in Stockport Old Town, just outside Manchester, Where The Light Gets In is a special and unique experience. With only 30 seats and an intimate open plan space with the kitchen team as much part of the evening as anyone else (or lunch on Saturdays). As many ingredients as possible come from their farm and as such it's a set tasting menu only. Nature, sustainability and organic nourishment are key, with a light and hyper seasonal Nordic (or perhaps Northern?) slant.
