Kraków’s Bottiglieria 1881 is the only restaurant in Poland with two Michelin stars. It was once a modern bistro with an extensive wine list and aspirations for more. After a few years, both the concept and part of the ownership changed, and today it stands as a truly exceptional place on every scale. Nat Bistro is located in the center of Kraków, taking over the spot of another well-known wine bar (Trzy Cztery Wine). The founder is Joseph di Blasi, who is well known in the Polish wine community. He is the first major importer of natural wines to the market via his company, Naturaliści, and operates a wine shop elsewhere in the city. An incredibly stylish place, Nat Bistro’s design sits somewhere between Paris and Copenhagen, no matter how clichéd that sounds: a few tables, positioned closely together; a large, high bar; and food that sits somewhere between a wine bar and a bistro.
