This cool restaurant, based out of a former mechanic’s workshop, is run by dynamic young chef duo Leo Lanussol and Agusto Meyer, and has ranked in Latin America’s 50 Best Restaurants list. Their focus on market-to-table ingredients means the menu changes daily; expect calamari with broccoli and bean aioli or heart sweetbreads with pickles. For dessert, the flan (creme caramel) is a total must. Proper is one of the few Buenos Aires establishments prioritising natural wine on its list; the chefs recently collaborated with Finca Suárez winery to make a house Malbec.
