This sceney, club-like ode to Japanese cuisine is the sister spot to Michelin-rated Koya and easily one of the best for raw fish in Tampa. With a dark, brooding atmosphere and pulsing electronic music, the space evokes futuristic speakeasy vibes and has top-notch, warm service. The fish is almost all flown in from Japan and is of the highest calibre, alongside the compulsory A5 cuts of beef and rotating specials.

The wine is deftly curated to match the grace and subtlety of the food, with sake, of course, and thoughtful wine selections ranging from the likes of a silky Sancerre Rouge to aged Piedmontese Nebbiolo, plus the occasional off-list Coravin selection worth an inquiry.

My favourite touch might be the complimentary supercharged sparkling water service, provided by the elusive Suntory highball soda dispenser.
