Arnaud Lallement is as much of an institution in Champagne as his restaurant, L’Assiette Champenoise, located just a few kilometres from the heart of Reims. Since taking over the business in 2002, Arnaud has achieved a 3-star status with the Michelin Guide. His approach to cuisine sits on the ‘edge of acidity’ with lots of purity and freshness and works particularly well with the colossal list of Champagnes he has procured for enthusiastic Champagne lovers. Long-standing Sommelier, Frédéric Bouché, who has been in the role for 40 years, has been at the helm of an impressive effort to store Champagnes for extensive periods of time, leading to one of the region’s signature cellars for mature Champagnes. The list canvasses Champagne’s diversity far and wide, from iconic Maisons down to celebrated growers, many of the producers are personal friends.
There are more than 1,000 Champagne references available – of around 3,500 wines in total - half of which come from grower estates. A speciality includes Krug by the glass which is backed up by an astounding collection of Krug by the bottle. Arnaud is a Krug lover and works personally with Olivier Krug to offer guests highlights from the Maison. The relationship has extended into the Maison itself with L’Assiette Champenoise being the official caterer for in-house culinary experiences.
