About Fujin Tree Taiwanese Cuisine & Champagne
Fujin Tree Taiwanese & Champagne is a modern Taiwanese restaurant with locations in Dazhi and Dunbei, as well as a flagship in the Taipei 101 tower that opened in 2024. Owner Jay Wu has seeks to redefine the concept of a vibrant, youthful Taiwanese restaurant, and has consistently earned a Michelin star since 2021.
The wine list is crafted by sommelier consultant Thomas Ho, who also serves as Star Wine List’s ambassador in Taiwan. His wine list is designed specifically for the restaurant, organised not by country, grape variety, or vintage, but by style and divided into four categories: ‘Delicate,’ ‘Elegant,’ ‘Charming’, and ‘Full-Bodied.’ This list is also integrated with the menu, with each dish linked to a wine style, making it easy and intuitive for guests to choose a pairing. This approach attempts to refine the traditional Chinese dining experience, where dishes are usually served all at once, for a more thoughtful pairing process overall.
